In between the beautiful, scenic nature shots, did you know spruce and pine needles could be used for seasoning as well as an ingredient in dishes?
I guess this truly defines how cooking with nature is more than just cooking in the wilderness, but also using what makes sense seasonally according to what nature provides. By catching fresh game, de-feathering the wild bird by hand (can we take a quick second to appreciate just how well this was done by the chef?!), and lightly preparing it with items foraged in nature's realm, it offers a very organic process in cooking.
